The fourth D.O.C.G. tasted by our oenologist Federico Salvador is a wine we are particularly fond of and a great favourite among our connoisseurs too: it is our Cru Torri di Credazzo Millesimato Extra Dry, made with selected 100% Glera grapes that are grown in the heart of the Conegliano Valdobbiadene area in the estate’s south-west facing vineyards
The grapes are cryomacerated using the Gianfranco Follador Method®; secondary fermentation takes place in autoclaves with the Martinotti (Charmat) method. This is followed by a long period on the lees at 0°. This slow and meticulous process enhances the properties of the grapes, preserves the aromas and guarantees the fragrance
The colour of the cap on the bottle is bright, cheerful and unmistakable, it catches the eye and hints at the excellence of the product. When the Cru Torri di Credazzo is poured, its typical bright straw yellow colour with pale lime green reflections is revealed and the bead is fine and persistent.
Now Federico Salvador swirls the wine around in the glass, as all sommeliers and oenologists do to release the aromas: the sparkling wine is elegant on the nose with pleasant hints of apple, peach and rose petals. Upon tasting, the Cru is soft, full-bodied, slightly sapid and satisfying.
This wine brings joy and laughter to any occasion and is best appreciated served at 8°C. An outstanding aperitif, it is also the ideal accompaniment to fish and shellfish.
