Our oenologist Federico Salvador guides us in a tasting of Follador’s D.O.C.G. Brut. He carries out a visual, olfactory and taste analysis and considers the importance of each of these factors as he makes an overall evaluation of this fine Millesimato, which is made with 100% Glera grapes.
As for all Follador’s D.O.C.G. wines, the base wine is obtained with grapes which are cryomacerated using the Gianfranco Follador® Method, whose patent we have filed to protect its exclusivity. After secondary fermentation in the autoclave, steady fermentation takes place, followed by a long period on the lees at 0°. This process helps enhance the characteristics of the grapes, bringing out the best of their aromas and fragrances.
As Federico Salvador points out, this long and complex process gives a wine that is pale straw yellow in colour with lime green reflections. It has a lively and very fine bead, typical of superior Millesimati. Its bouquet is intense and reveals notes of citrus fruits, almonds and acacia flowers.
Upon tasting the wine, the oenologist is struck by the perfect balance of acidity and fragrance. It is well-structured and the finish is dry. The overall impression is of a superior Prosecco which is an ideal aperitif wine, as well as a great accompaniment to light first and second courses.
Follador’s D.O.C.G. Brut is available in 750 ml bottles, Magnums and Jeroboams and is guaranteed to make every social occasion, however big or small, memorable.
